Pretty nice and jazzy first song! I liked your use of samples and the drum beat that comes in later on. However, the song gets very repetitive after a while; that loud and expressive intro becomes boring after the first few times. You might want to also consider using chords other than minor ones.

Most people don't do instruments by ear; in fact, it' pretty much impossible unless you're some kind of savant. Most people either NSFImport the instruments or use Audacity to look at their waveforms.

As a side note, is there any reason why you need to imitate instruments exactly? Just wondering.

Assuming that your piano instrument is a duty cycled V02 to V06 instrument, you could simulate the soft pedal by making an instrument with the same volume envelope but a different, less plucky duty envelope. The sustain pedal could be done with echo effects or by alternating channels every note.
