You're gonna have to elaborate on what you mean by "matching" because from those examples I have no concrete idea of what it is you're asking.

For NES music, you can copy the instruments' style and then sequence the song in some music program for making NES music (like famitracker wink wink nudge nudge). For sample based music (like SNES, Amiga, N64, etc) you can get the samples and then sequence it in a regular daw (for Amiga you can use protracker and for SNES you can use an SNES tracker if you can find a good one). It's also a good idea to cover the song first before "matching it" with a custom song.
