Why the "N163" does not let me play 2 different sound waves at the same time?

I want to play a sawtooth wave and sine wave at the same time with the "N163" using 3 channels but in doing so the sawtooth wave plays a sound of triangle

Not sure why you quoted this, but the reason for this is that the N163 accesses waves from certain positions, and both of your waves happen to share the same position. You can fix this by changing the 'Wave Position' of one of the waves in the Instrument Editor. If you're using 0CC-FamiTracker(which you should), you can also use a Zxx effect.
A squid with a higher post count than the NES can handle.
